Hello, and welcome to my world! If you came here for pictures of food, recipe ideas, or to read little anecdotes about a little pug named, Lou, then you’ve come to the right place!
So why am I writing this blog?
I am here because in April of 2016, I woke up. I was extremely over weight, grumpy, and insecure about my body and self. After many years of complaining and not acting, I decided to wake up and do something about it. A little fun fact about me, I am not athletic whatsoever! I admire those who actually enjoy running. More power to ya’ll! When it came to losing weight, I thought I’d try the basic formula, “Move your butt, Bianca!” Unfortunately, I didn’t see much of a difference. Not only that, but I dreaded going to the gym and found it was a habit I simply could not keep. I knew I needed other options if I was going to make this change.
During my last year of college, I became obsessed with The Food Network. I could watch the channel all day everyday. I fell in love with the art of cooking and the science of putting a little of this and a little of that together in order to make magic! I was inspired! From there, I read more cookbooks, searched blogs, and spent a lot more time on Pinterest. It was all about practice, practice, practice! The best part about all of the practice, is that it resulted in yummy food! So although I haven’t attended culinary school (ONE DAY!), I am a product of what happens when you watch too much TV! 😉
By now you may get the point that I love food. The only problem is that my body loves to keep all of that yummy food on my body and not let go. When it came to my transformation, it was important for me to start the process from the inside out. I read Kimberly Snyder’s The Beauty Detox Solution and it changed my life. For the better! In this book, Snyder uses scientific research to explain the benefits as well as the harms when it comes to eating certain foods. After I read this book, I made up my mind to follow a diet that was not only Vegan, but Gluten Free.
By this point, I had been cooking for about a year so I was comfortable in the kitchen. I loved hearing the many, “Oh I could never be vegan, I love cheese too much” or the “Don’t you miss meat?” I used this opportunity as a challenge. How could I take the foods I love and make them Vegan and Gluten Free?
Which brings me to here…(you made it!)
I am here because I wanted a place where I could share my favorite recipes with my friends and family. Now I will confess, that I am not the perfect vegan, but I am the perfect foodie! With that being said, there will be times where I may dabble in the meats. I promise, it’ll be worth it.
A year later, I am 50 pounds lighter and happier than ever! On April 1, 2016, I told myself, “This transformation isn’t only for me, but for anyone who has ever struggled with losing weight.” I want everyone to know, if I can do it, YOU CAN DO IT!
